2017 DIJON BLOCKS PINOT NOIR
Whole cluster pressed and racked with a low turbidity to enhance minerality. Fermented in neutral oak barrels to create a creamy texture and lift aromatics, as well as stainless steel barrels to preserve a bright, mineral driven character. This variation of vessels balances striking aromatics with a structural frame. Aged 8 months on its lees with minimal stirring to refine the structure.
