2021 Carbonic Pinot Noir
Carbonic maceration is a special form of fermentation, as we place 100% whole cluster Pinot Noir into a tank and blanket it with carbon dioxide gas. The natural enzymes in the grapes break the fruit down creating alcohol and the uniquely fruity profile the wines have. After three weeks the wine is pressed and is aged shortly in stainless steel to preserve the aromatic profile before bottling.
The fresh release style of our Carbonic Pinot is a window into the flavors of very young Pinot Noir, often only seen in the cellar by our winemaking team. Bright red fruit aromatics of strawberry, ripe cherry, raspberry, and even a hint of banana fill the glass. A savory note from the whole cluster gives a subtle undertone of black tea leaf, cinnamon, and tree sap. The texture of the wine is supple with light fine-grained tannin that does not overpower. Carbonic maceration wines are meant to be consumed young so as to enjoy the bright fruit flavors, don’t wait to open this one!
